Fluffy rice is stir-fried with saffron, barberries, pomegranate juice, raisins, almonds, coriander, cumin, chopped apricots and a pinch of chilli. For extra richness, add a dollop of creamy butter. Fill puff pastries of your choice with the rice mixture, brush the top of the pies with egg wash and bake to golden perfection at 220℃ for 35-40 minutes.
